Пирожки with mashed potatoes, mushrooms and ‘nduja
Ingredients for 11 persons:
– 1.5 glass of milk
– 11 grams of yeast
– 700g/1kg of flour
– a lot of ‘nduja
– 4 eggs
– 3 spoons of sugar
– 1 coffee spoon of salt
– 1 kilo of potatoes
– 2 big onions
– 200g of mushrooms
-3/4 of a glass of oil
– 1/2 table spoon of salt
– 80g of margarine or butter
How to do it: (total from scratch to dish: 5 hours)
First take glass milk to make it warm, not hot, but warm.
Dissolve yeast in glass of milk, add one table spoon of sugar, mix it, add 3 to 4 table spoons of flour. mix it and cover it with plastic foil for half an hour, until you see foam forming on the top.
after that, warm up the rest of the milk (half a glass) and put it to the mix with yeast, add 4 eggs, 2 table spoons of sugar, and little bit of salt, mix it and add about half of a kilo of flour, mix it and keep on adding flour until you have a soft and elastic dough that doesn’t stick to the hands.
Add two table spoons of oil on the dough, mix it, cover it and put it in a warm place for one hour until it grows.
After one hour add another table spoon of oil and mix it.
Cover and leave for an hour.
After one hour again add two table spoons of oil, mix it and start forming little balls of the size of the walnut or small eggs, make sure your hands are always in oil.
Stretch the ball, put the potato with mushrooms and one thick slice of ‘nduja inside each one Пирожок and close it. Leave it for 20/ 25 minutes to grow more. in the meantime warm up the oven to 180 degrees, mix two eggs and two table spoons of milk and cover with the cooking brush the surface of the pie. put it in the oven, for 15/20 minutes until it gets brown and crispy.
