Risotto Mantovana style with ‘Nduja

Ingredients
- 450 grams of rice
- 4 sausages or pork pesto

- 1 liter of broth
- grated Grana Padano cheese
- white wine
- salt
- huge pieces of ‘nduja
Preparation:
Bring broth to a boil, then pour in the rice and let it simmer rain for 12 minutes. While the rice is cooking, prepare the sauce. After 10-12 minutes turn off the heat and cover the pot of rice, placing a cotton cloth between the pot and lid. So doing, the heat does not disperse and the excess vapor is absorbed by the fabric. Let rest for around 10/15 minutes.
